Simple rhubarb apple dessert with cream



For 4 people.

Preparation time: 40 minutes (with cooling)

Ingredients:

- 4 small apples
- 4 fist-fulls of sliced rhubarb
- 3 tablespoons of sugar
- 1 tablespoon of vanilla sugar / or 1 teaspoon of vanilla extract
- water

- 200 ml / 1 cup of double/heavy cream + 1 tablespoon of sugar

Method:

Peel and slice the apples. Put them in a pan with rhubarb. Add sugar and vanilla. Cover with water and bring to a boil. Reduce the heat to low and cook for another 15-20 minutues.

Smash and cool.




Mix the cream with sugar until it forms soft peaks.



Serve.

Simple baked potatoes with parsley



For 2-3 people.

Preparation time: 40 minutes

Ingredients:

- 2 sweet potatoes
- 2 big regular potatoes
- 1 teaspoon of salt
- pinch of pepper
- 1 teaspoon of parsley
- 5-8 tablespoons of olive oil

Method:

Peel and slice the potatoes. Cover them with remaining ingredients and put them on a baking sheet covered with baking paper.



Bake in a preheated oven at 220 degrees Celsius / 420 Fahrenheit for 30 minutes. After 15 minutes, turn them around.

Mixed salad with mozzarella cheese



For 2 people.

Preparation time: 15 minutes

Ingredients:

- 1 spring onion
- 2-3 big tomatoes
- 1 small cucumber
- 200 grams of mozzarella cheese
- 4 tablespoons of olive oil
- 3-5 tabelspoons of vinegar (I recommend balsamic vinegar)
- pinch of salt

Method:

Slice onion, tomatoes, cucumber and mozzarella in small pieces.





 Combine them with oil, vinegar and salt and serve.

Pasta with tomato sauce and green pepper



For 2 people.

Preparation time: 25-30 minutes

Ingredients:

- 240 grams / 9 oz of pasta
- 1 big green pepper
- 1 onion
- 200 ml / 1 cup of tomato puree in a can
- 1 tablespoon of tomato paste
- 1 teaspoon of red pepper powder
- pinch of salt and chili powder
- 1 teaspoon of sugar

Method:

Cook pasta in salted water. Drain.

Slice the onion and pepper in small pieces.



 Cook the onion in high heat until it becomes soft and lightly brown.



Then add pepper and cook for another few minutes.



 Pour in tomato puree. Add salt, chili, tomato paste, red pepper powder and sugar.



 Cook in a medium low heat until half of the liquids evaporate.

Add in pasta





and cook in a high heat for about 5 minutes, stirring non stop.

Serve.

Creamy chicken curry with rice



For 2 people.

Preparation time: 40 minutes

Ingredients:

- 250-300 grams / 9 oz of chicken
- 2 spring onions
- 200 ml / 1 cup of chicken stock
- 1 teaspoon of curry powder
- 1/2 teaspoon of curcuma
- 1/2 teaspoon of sweet red pepper powder
- 1/2 teaspoon of chili powder
- 3-5 tablespoons of cream
- salt

Method:

Slice the onions in small pieces.




Also slice the chicken in small pieces.

Cook the sliced onion on a medium high heat until they become soft.



Add meat



 and cook for another 5 minutes, then pour in stock.



 Add all the remaining ingredients except cream.




Bring to a boil and the reduce the heat to low and cook for another 25-30 minutes. (if there is no stock left add some more)



After that time mix in cream



 and cook for another few minutes. Serve with rice.

Bagel bombs with cheese and chicken filling



For 9 bagel bombs. For 4 people.

Preparation time: 1 1/2 hour

Ingredients:




- 480 grams / 3 3/4 cups of all purpose flour
- 200 grams / 7oz of chicken
- 3,2 dcl / 1 1/3 cup of warm milk
- 20 grams / 2 tablespoons of yeast
-1 1/2 teaspoon of salt
- 1 teaspoon of sugar
- 4 tablespoons of olive oil
- 3 fist-fulls of grated cheese
- 3 tablespoons of sesame seeds
- pinch of salt, ground pepper and red pepper powder - for marinade


Method:

In a small bowl, combine warm milk, sugar, and yeast. Let stand for 10 minutes or until yeast is bubbly.



Put the flour, yeast and oil in a big bowl. 









Combine them together.

Then add salt. If you add the salt with yeast, the dough will not rise. So always add the salt, when yeast is already combined with flour.

If the dough is sticky, add additional flour, 1 tablespoon at a time, until the dough comes together in a solid ball. If the dough is too dry, add additional water, 1 tablespoon at a time. Scrape the dough onto a lightly floured surface and gently knead into a smooth, firm ball.

 Let the dough rest for at least 30 minutes.







In the meantime slice the chicken in small pieces and add pinch of salt, ground pepper, 1 tablespoon of sesame seeds, 1 tablespoon of vegetable oil and red pepper powder. Combine and leave it to marinade for 15 minutes.



 Then put it in a pan and cook in high heat for 5 minutes. Cool.



Divide the dough into 9 pieces and stretch each piece into small circle. Fill each dough with teaspoon of marinaded meat and grated cheese.





Close the edges and create a bomb. :)



 Repeat and put each bomb in a greased baking pan.



Brush them with egg wash and sprinkle with remaining sesame seeds and cheese.




 Let them rise for about 15-20 minutes and then put them in a prehetaed ove at 180 degrees Celsius / 350 Fahrenheit for about 30-35 minutes.
